                    150 years of ageing (of which we own and sell some aged between 50 and 150 years, absolutely unique pieces 
                    worldwide, numbered and with limited availability).
The Art of Food Pairing
Our collection includes also Balsamic Vinegars produced in single woods and aged for 20 years, respectively 
in Juniper wood and Cherry wood, which always leave everyone who tastes them open-mouthed.
The main difference between these two incredibly aromatic vinegars is the flavour, which changes the ideal 
match for dishes: vinegar aged in Cherry wood barrels is ideal for flavouring foie gras, Parmesan cheese, 
desserts, ice cream, Parma ham and melon, smoked salmon and all kinds of cheese (especially goat's cheese), 
while vinegar aged in Juniper wood barrels is ideal on red meat, on wild game, on rare fillet steak and on 
grilled meats.
Beware of imitations
The real Balsamic Vinegar of Modena is made exclusively from acetified grape must (also known as Saba, which 
was originally used as a sweetener back in the Ancient Roman era).
It differs from the balsamic vinegars normally found in supermarkets because the latter are produced using 
caramel, wine vinegar and other additives in order to make the product as dense and sweet as real balsamic 
vinegar, whereas in the original, a lot of time and processing is required to achieve this kind of sweetness 
and density.
